Make the reason for this summer season an opportunity for a new and healthy start. Just wanted to thank you for posting this! I leave for vacation in about two weeks, and while I've lost about 20 pounds so far this year, I've stalled out recently and I suspect the culprit is at least partly cheese and nuts. I'm going to modify this a bit to suit my preferences and give it a try next week. I'm especially thrilled that the soup is so vegetable-heavy and healthy - a struggle I've had since going low carb is feeling like I'm eating too much cheese and meat, and not nearly enough vegetables, so this is quite exciting to me.
